Location: Chicago, IL

We are seeking an experienced and passionate Sommelier & Floor Manager to join the opening team of an exciting upscale restaurant debuting in Chicago .

This role will be responsible for leading the restaurant’s wine and sake program while also supporting floor operations during service. The ideal candidate combines strong beverage expertise with a deep commitment to hospitality, guest engagement, and team development.

The Sommelier will curate and manage the wine program, maintain strong relationships with vendors, and provide exceptional tableside service through thoughtful wine and food pairings.

Experience in upscale or fine-dining restaurants is strongly preferred.

• Curate, maintain, and update the wine and sparkling wine list in alignment with brand standards and concept

• Provide tableside wine service , guiding guests through wine selections and recommending food pairings

• Manage wine inventory, ordering, storage, and cost control , ensuring optimal stock levels

• Build and maintain relationships with wine suppliers, distributors, and producers , securing allocations and favorable pricing

• Monitor and analyze wine, sake, and spirits sales performance , identifying trends and opportunities

• Oversee wine cellar organization and storage conditions , ensuring proper handling and rotation

• Lead staff education and training programs on wine, sake, and beverage service

• Conduct regular beverage training sessions for FOH staff to enhance product knowledge and sales

• Support floor management during lunch and dinner service , ensuring a high level of hospitality and service standards

• Collaborate with the General Manager and leadership team on beverage strategy and guest experience.

• Sommelier certification preferred (WSET Level 2, Court of Master Sommeliers, or equivalent)

• Minimum 4 years of experience in elevated or high-volume dining restaurants

• Strong knowledge of wine regions, wine service, sake, and premium spirits

• Experience managing inventory, beverage purchasing, and vendor relationships

• Proven ability to train and mentor service teams

• Strong understanding of wine pairing and menu integration

• Knowledge of P&L, beverage cost control, and sales strategies

• Excellent guest engagement and hospitality skills

• Advanced English required
• Spanish is a plus
