A restaurant group is seeking an executive Chef for its high-end Japanese restaurant in the Pittsburgh area.

Title: Executive Chef for a Japanese Omakase Sushi Restaurant

FLSA status: Direct Hire Exempt about 40-45 hours a week

Location: Pittsburgh PA (Relocation Support is provided)

Pay: 100- 150 K

Working Hours: about 40- 45 hours a week

Key Responsibilities:

• Lead kitchen operations with a focus on quality, consistency, and execution
• Develop seasonal omakase and à la carte menus blending traditional and modern Japanese cuisine
• Source premium ingredients and manage vendor relationships
• Oversee food quality, presentation, and sanitation standards
• Train and mentor kitchen staff while managing food cost, labor, and inventory
• Manage and optimize kitchen workflow and station efficiency during service
• Collaborate with front-of-house to ensure seamless guest experience and pacing of omakase courses

Qualifications:

• Proven experience as an Executive Chef or Head Sushi Chef in a high-end Japanese restaurant, preferably omakase-focused
• Extensive knowledge of traditional and modern Japanese cuisine, including sushi, sashimi, and seasonal menu development
• Experience sourcing and working with high-quality seafood vendors and specialty Japanese ingredients
• Strong leadership skills with the ability to train, mentor, and develop kitchen staff
• Solid understanding of food cost control, labor management, and inventory systems
• Knowledge of food safety and sanitation standards (ServSafe or equivalent certification preferred)
• Ability to maintain consistency, precision, and high standards in a fast-paced, fine-dining environment
• Strong communication skills and ability to collaborate with front-of-house leadership and kitchen staff
• Chef experience in Japan is highly preferred
